Potatoes, one of the most largely consumed vegetable in the world is often associated with obesity. Many children who make faces on eating vegetables happily eat potatoes, but putting aside all the good creamy tasting qualities, potatoes are a completely healthy vegetable.
Potatoes are grown all around the year in different areas that make them readily available all 365 days of the year. Potatoes were first grown in South America by the Indians living there, which were later transferred to other parts of the world like Spain, Germany and other parts of Europe. Potatoes were first thought to be a toxic vegetable and was also thought to be the cause of leprosy ,but some people made efforts and educated people about this delicious vegetable.
Americans eat this vegetable more than any other food .potatoes belong to the family of tomatoes, eggplant and bell peppers, basically potatoes are the portion of a root of a plant, the upper plant takes its nutrition from it, if allowed to flower and fruit the potato plant will bear fruits resembling tomato, which are edible.
There are more than 100 kinds of potatoes; some of them are red, brown or white from outside and white or yellow from inside. One type of potatoes which is purple gray from exterior and beautiful violet from inside is also available. While buying potatoes, select from the bulk display instead of getting from a store or the ones packed in plastic bags as it can increase the chance of moisture and effect potatoes negatively.
When cooking potatoes, cut them straight before adding to the cooking pan as keeping them cut for long can result in discoloration or add the pieces of potatoes to a water bowl in which few drops of lemon juice has been added which will prevent the change in color and also retain its shape while cooking.

There are many benefits of eating potatoes, yet the poor vegetable is thought to be nothing but bad for you. The only thing the health benefits may be varied is by the way it is cooked. Frying or roasting it with sour cream or butter is of course not a very wise choice, go for baked or plain roast kind or boil it and eat it with its skin as it increases the advantages.

It is responsible for carrying out more than 100 enzymatic reactions in the body; enzymes are the proteins that help induce chemical reactions inside the body so vitamin B6 is active virtually everywhere in the body. The formation of amino acids, building blocks of protein and nucleic acid, needed for the synthesis of DNA all require vitamin B6. Haem, the major protein inside the red blood cells too need this vitamin for its production.
The vitamin B6,found in potatoes are required for carrying out many neurological activities it helps in the formation of amines, a molecule needed for the transmission of messages from one neuron to other. Many neurotransmitters are also produced with the presence of vitamin B6, including serotonin, deficiency of which can lead to depression, GABA needed for mental health, epinephrine and norepinephrine, needed for responding to stress and melatonin needed for good night sleep all rely on vitamin B6.
Again vitamin B6 found in potatoes plays a vital role here for your heart health. This vitamin carries out methylation reaction in the body which converts the toxic molecule called homocysteine into other, benign molecules and prevent the heart attack by protecting the inside walls of arteries and reduce the chances of arthereosclerosis.
Potatoes help the breakdown of glycogen in the liver, where it is stored. Potatoes promote its breakdown when it is needed and resultantly cause better athletic performance and endurance.
